I’ve been in a soup-making mood lately. I think its the weather.. the cool air and sunny days. While out a few days ago I had a spicy tomato soup as an appetizer. I loved it so much I figured I could try and make it myself… and what I came up with was incredible. If you are into creamy tomato soup, spiciness, and the sweet flavor of basil, then this soup is for you. Please try it.. its simple!
Spicy Tomato Basil Soup
(This is a small portion recipe, but you can double it to make enough for a family meal)
2 (14oz) cans of fire roasted tomatoes (I use Hunts)
5 cloves of garlic, chopped
1 medium sweet onion, chopped
1 cup chicken stock
1/2 cup heavy cream
2 tbs olive oil
20 fresh basil leaves
Salt, pepper, crushed red pepper to taste
Chop onion and cook in olive oil until translucent. Add garlic and lightly stir for a few minutes. Add cans of tomatoes (including juice). Cover and simmer for 15 minutes. Add cream and chicken broth and let simmer for about 10 minutes. Soup will start to thicken. Add fresh chopped basil, salt, pepper, and red pepper and let simmer for another 5 minutes or so. Blend soup in a blender (I use an emulsifier right in the pot which is super easy). Garnish with more red pepper or basil.
