I had an extremely productive Sunday! Maybe because of the extra hour? Honestly…I forgot about the time change. I woke up at 6:30 feeling fresh and wondering why the sun was in my eyes..yesterday I was out the door by 6:30 and it was pitch black. Duh. Anyway, I woke up and immediately got into my car and headed ten minutes over the border to PA to forage for gas. What a life. I passed a few exits on 80 where I could see lines of nervous Jerseyans lining up at the tanks.. and went to a gas station at one of my favorite grocery stores. No line! I pulled right up and filled my poor car to the brim.
Since I was out and already in the parking lot, I decided to go in and mill around the produce aisles. I needed snacks for work and am one of the few people in the world who LOVE to grocery shop. (Bad idea, since I hadn’t had breakfast yet.) I bought a handful of organic green apples, a couple avocados, two baby eggplants, some lentil chips and sea salt vinegar chips. All things I can snack on at work to help keep me out of the candy jar. I also picked up two half gallons of my new favorite coconut milk (one for home and one for work). I’ve been using coconut milk instead of whole milk lately because it actually stops me from breaking out. (Nutritionist recommended!)
Since my week was totally derailed (along with everyone else on the east coast) I’ve decided to totally skip my Friday recipe post. For you two readers that I have, thats going to totally ruin your entire evening I’m sure. Anyway today I’m going to kind of review (more like share..) my favorite cookbooks/food books. When I was in college we had a stack of cookbooks that we kept under our tv. At night when we’d sit down to relax, we would all usually grab a cookbook and mark pages to try. Everyone knows that there are hundreds of cookbooks around, which makes it kind of difficult to know which one to go to when you get hungry.
I’ve mentioned this book before, but Betty Crocker’s Hearth Health cookbook has always been good to me. Its full of simple recipes and little tips and tricks to make life easier.
My next favorite is Perfect Vegetables by Cook’s Illustrated Magazine. In this book there are whole chapters devoted to single vegetables and the perfect way to cook and prepare them. They test recipes time and time again to find the best of the best.
The South Beach Diet Cookbook. I have never done this diet. I honestly think its weird and that your diet should be a balancing act, not a plan full of odd phasing. I have no clue why I even have this book, but I love it. There are a lot of recipes in here that contain no wheat or dairy, because I assume, that is part of the diet plan. But for me its perfect! There are awesome recipes like eggplant marinara, oat smoothies, lobster bisque and bean soups, and healthy desserts. Its a different spin on a lot of typical foods. It will definitely change up your game.
The 100 Healthiest Foods on Earth. If you take anything away from this post, it should be that this is the best book in the world. This is a book about food, but not really a cookbook. The first page has only one thing on it, and it is this quote, “If you are what you eat and you don’t know what you’re eating, do you know who you are?” – Claude Fischler. I totally agree. Processed foods have taken over our country, and we need to get a grip. This book explains whole foods, why they are good for you, and ways you should be eating them. It is full of glossy pages, funny comments, and shows a photo of almost every food that is discussed. It is one of my all time favorites.
