Sunday ramblings

Hi guys! Its absolutely beautiful here today, and I hope that wherever you are it is just as nice. It’s spring-fever kind of weather – one of those days that you have to convince yourself it is still too chilly to wear shorts, but all you want to do is pull your bright pink shorts out of the closet and throw them on. It was a pretty steady 60 degrees at my house today and actually kind of hot in the sun…no complaints here!

Today for you I have a little bit of grocery shopping, food prep, new toys, and some super easy recipes. Im all over the place today.. which is why I chose ramblings as my title. Bear with me, Im sure something here will spark your interest. :)


I have been pumping myself full of lemon water today. I feel like I haven’t been drinking nearly as much as I should, and decided some organic lemons would really help clean out my body a little. The lemon water was also much tastier because I got to enjoy it in the sun. I bought a huge bag in hopes that I will remember to squeeze some lemon into my water at work this week and keep the hydration going.

This morning my mom went on a big shopping trip and, because I have a grocery shopping addiction, I decided to tag along. I wanted to get a few snacks and lunch ingredients for my extra-long work week. (In honor of the time change our hours at work get longer…I’ll get five extra hours this week. Im grateful for it, but the first week is tough getting used to!)


Here’s my portion of the grocery haul today. A huge bag of salted cashews for snacking on. Giant smart waters to help with my hydration goal this week. Cranberries for salads. Dark chocolate (Trader Joe’s brand, my fave!). Nori!! ( I had the itch to make my own sushi, just hold on until I perfect it!). Brown tomatoes, mangos, red onion, cilantro and avocados. Baby bakchoy. Oat milk (I couldn’t resist..I’ve never had it but I love trying new “milks”). And an aloe drink (I haven’t had it in a long time, but a friend reminded me about it this weekend.)

The first thing I did was make a sandwich:


Gluten free rice-based bagel with mayo and a hefty helping of horseradish. One of my brown tomatoes, juicy roast beef and swiss cheese. I topped it with some mixed greens and lots of peppers. Fantastic.

Next I started a little bit of food prep for lunches this week.

I used the mangos, onion and cilantro I bought to make my simple mango salsa. During the week I will throw it on top of some chicken, or eat it with Quinoa chips for lunch. I love having it on hand.

Simple Mango Salsa:


One mango
1/4 medium red onion
1 clove of garlic
A slice of lime
2 tbs fresh cilantro
Salt, pepper, red cayenne to taste.

To do:
Super simple! Cube the mango, chop up the onion (I chop it pretty small so that I don’t bite into a huge piece), chop up cilantro, squeeze lime juice into bowl. Chop up garlic and mix in. Season to taste. Done! Let it sit in the fridge so that the flavors meld together. Yummy.

Next on my list was breakfast. I’ve been back on an overnight oats kick. I also love being able to make breakfast the night before and being able to just grab it and go. Today I made my Super Seed Cereal (as I’ve started calling it). The foundation of this recipe came from Oh She Glows‘ chia seed breakfast bowl, but it has evolved quite a bit.


Super Seed Cereal


1/4 cup of oats
1 tbs chia seeds
1 tbs hemp seeds
2 tbs ground flax seeds (I use flax packs, single servings)
1 cup almond milk
1 drizzle of honey (optional)
1 drop of almond or vanilla extract (also optional)

To do:

Mix together, set in fridge overnight. In the morning you can enjoy the way it is or add a little splash of almond milk… sometimes the chias soak it all up and i like it a little wetter. 

My favorite part about this cereal is that you can adapt it anyway you please.

Here’s a sample of what my new, cute little instant camera can do! I can’t wait to take it on vacation this year and snap instant photos with all of my friends. Looking forward to the up coming months for sure.

All in all today was an awesome day. And the best part? Its 10 minutes to seven.. and the sun is just going down. Summer is right around the corner.

An accomplished Sunday

I am fortunate enough to live on the Jersey side of the Delaware Water Gap. If you don’t know what that is, it is a split between two huge mountains that separates NJ and PA. If you are a frequenter to the Poconos or to NYC then you’ve probably traveled through this iconic landmark along the way. A large portion of Mount Tammany (the mountain on the Jersey side) is actually part of my family’s tree farm.

Today one of my old friends and I went for a hike through the gap. We started at the bottom by the river and climbed about a mile and half to the top, and then about a mile and a half back around to the bottom.

It was intense. Brisk burn-your-chest air actually felt really good in my lungs, and my legs burned like no other. The best part about this trail was that it was super steep all the way to the top but then levels out and eases you down the back-side of the mountain. A great way to heat up and sweat and then cool down on the way to the car! Im going to be sore tomorrow for sure, and Im totally looking forward to it.

I was thoughtful today and grabbed my fancy camera for fun pictures. Too bad I haven’t charged it in a month…Nobody’s perfect.

It was chilly today, and even flurried on us while we climbed to the top. I definitely broke a sweat, but got kind of chilly on the way back down the trail.

We planned on having lunch after our hike and decided Panera was a good choice for a hot drink and a soup.

I had a chai tea latte. Sometimes they are too sweet for me, but this was perfect for today, and seemed extra spicy.


For lunch, a spicy tomato soup with focaccia croutons (oh baby did I break my wheat rule), and a thai chicken salad with peanuty dressing and pickled vegetables.  soupsalad

I did indulge in the croutons in the soup, but avoided the fried noodles in the salad. I guess I just was picky. This lunch completely hit the spot after such an awesome workout.

I’m just tying up some loose ends tonight. A few freelance flyers to finish up and some laundry.
Full week of work ahead of me!
